Healthy PB&H Smore’s

I don’t know about you but, I LOVE honey.  And I love NEW YEARS RESOLUTIONS!

And I’m guessing that one of your New Years Resolutions is to eat healthier!  If you are like most of us, eating healthier is always on the radar.  I am always on the search to finding healthier versions of my favorite foods.

In my opinion, a close to perfection food, is a PB & honey sandwich with a bunch of honey all over it. My mouth waters just thinking about it.  Perfection food however, usually doesn’t sync up with those New Years res. goals.

As we all know honey, isn’t the best travel companion due to its high tendency to stickiness to spill.  Nor is it the best in regards to messy kiddos!  And when I make my kids a PB&H sandwich for their lunches, they always come back uneaten.

Their reason why?

It was too sticky to eat mom!  I couldn’t taste the honey the bread absorbed it all.


Well, I have finally found a cure to the sticky mess, and bonus that it fits in with a healthier lifestyle as well!

It is called Nektar Naturals honey crystals and I had to share it with you.


Not only is this a much less messier form of honey, it also has less carbs per serving!

Here is the breakdown:

3 tsp of Nectar Honey Crystals = 9g carbs, and 36 calories

3 tsp of Kirkland Brand Clover Honey = 17g carbs, and 60 calories

*Since I pick and choose what I want to eat for my carbs, every carb saving counts.


So now I’ve shown you that it is a great alternative to honey (if only for the sticky mess alone!).

This is what I did with the honey crystals for that splash of sweetness.

I made a WAY healthier version of, make at home Smore’s! (Who said Smore’s are for the mountains only?)


Easy, fast, and a perfect small treat for that after dinner sweet tooth.



3 tsp of Nektar Naturals Honey Crystals

2 tbs of PB2 Powdered Peanut Butter (less fat means WIN for me!)

Small handful of chocolate chips

1 Marshmallow

1/2 of a graham cracker (Honey Maid are my favorite)



Mix up the PB2 Powdered Peanut Butter according to directions.  Take your half graham cracker and split it into 2 sticks.  Coat each stick with PB2 or Peanut Butter.  Sprinkle as much Nektar Naturals on the grahams as you wish.  Top with a few chocolate chips.  Place the marshmallow on top of the peanut butter and smoosh (a real word) down a bit so it won’t fall off during cooking.  Put sticks on a plate and place in the microwave.  DO NOT OVERCOOK!  Cook for 5-10 seconds, watching the whole time!  When the marshmallow is fluffy, take it out, sandwich that marshmallow with the two sticks and enjoy.  (I like to dunk mine in milk).
